Pit Cooking Variations?

I think I’ve heard of an open fire cooking process where the food is wrapped properly and buried in the hot coals to be cooked.

I don’t think that I’ve tasted this kind of cuisine, but I think it sounds interesting.

Does anyone here know about that technique?

Don’t they use this kind of method at the Hawaiian luaus? We used to have a neighbour who would dig a pit and put a whole pig on a spit. It really gave my Dad the willies. He was raised in the city and apparently pit cooking wasn’t done in the Brooklyn of his youth…he thought it might be voodoo!

oh…I have heard during some festivals…and in places like iran, pakistan and other muslim countries…pit cooking is part of the festival celebrations…like the pig you told about heretoday…..their they even cook goat this way…

The setting can definitely affect the impression of some cooking practices. I used to live in the suburbs and one day I looked out the window and saw the neighbors doing some butchering in their driveway. That was weird.

I attended a barbecue, as a child, where a pig was roasted in a pit.

I think every culture that has cooked using open flame, probably has a “buried barbecue” method.

I think that there’s also a technique where hot stones are placed in the cavity of the pig, or whatever’s being cooked.

I agree with SageMother - There probably are many variations that have been tried through the years.

People living in the deserts I have heard…use the sand as a filling to heat up the meat faster…...so yes…there are really so many different variations of cooking.
