Ingredients
Jalapeno peppers
Cooked shrimp
Cream Cheese
Jimmy Dean Sage sausage
Sharp Cheddar cheese
Thinly sliced bacon
Bleu Cheese
Parmesan Cheese
Green olives with pimentos
Preparation Instructions
Pick out about 40-45 large jalapeno peppers and wash thoroughly. Cut off the stem ends close to the top of the popper. Clean out the seeds and veins with a old fashioned potato peeler. Not the kind with the flexible blade. Rinse out the seeds with cold water or just shake them out. It depends on how hot you want your poppers to be. The more seeds you leave in the hotter the popper will be. (Careful they can get pretty hot even for the most experienced hot food addict).Poke a hole in the end of the popper to let some of the heat out while the popper cooks. Mix the above ingredients in a food processor not including the small shrimp or the bacon Be sure the sausage is cooked before blending. I have used some of the cheeses listed together. It is up to you. The one cheese that I always include is the cream cheese. Make the mixture fairly thick and load the mixture into a jerky gun with the Slim Jim maker attachment and load up the poppers about 1/2-3/4 of the way. Take the small cooked shrimp and push it into the popper. Take your piece of bacon and wrap it around the filled popper. Be sure to cover the open end of the popper with bacon to stop the mixture from bubbling out. Use a toothpick to secure the bacon to the popper. I use a full piece but a 1/2 piece of bacon will work.
I heat my BGE to about 425 and cook indirect for about 45 minutes with usually one turn. Keep an eye on them. If you cook them on an open flame the fat from the bacon will burn them in a hurry. Some people like them black but I am not one of them
Serve with your favorite ice cold beverage.
Cooks Notes
I use colored toothpicks to indicate the hot poppers from the milder one if I am making a mixed patch. The poppers will be great with about anything that you have available in the fridge. Use your imagination. I have used turkey, pork, seafood mix, imitation crab, hamburger, wild game, chicken, salmon, and scallops. Just to name a few. Once you start making them and taking them to parties or picnics you will be expected to bring them every time. Be sure to save a few for yourself because they will be gone before you know it
