Ben’s Basic Bird
I like to joke with my wife that if I ever wrote a cookbook, it would be called ‘Olive Oil, Salt, & Pepper’ because that’s my response to about 90% of the questions that people ask me about cooking. Well, more specifically, “How did you prepare this?”. People love, love, love my chicken. They love it. Everyone asks me how I do it. You already know the answer. My strongest influences in how I make my chicken are Ina Garten and Thomas Keller. If you don’t know who they are, look them up. They will change your kitchen for the better.
The key to great cooking is often not in the recipe. It’s in your technique as a cook. Do you understand why things are done? If you don’t, you don’t know when you can cut a corner and when it’ll ruin what you’re cooking. The biggest enemy of a bland bird is moisture! There I said it. Are you shocked? Are you turning the page? I don’t have time to spell it out but water equals steam. Steam inhibits sugars from carmelizing. Carmelization is the keystone of obtaining a crispy, browned skin that hovers over a juicy flavorful piece of chicken. So next to generous salting of the skin, you must, must, must dry the chicken inside and out before you’re going to be successful. And those people who only cook the breast meat to 155 are too fussy for me.
In an effort to get you to cook like me, I’m going to write this recipe about how I think about a chicken, not how a recipe normally looks. There are many reasons for this but if you never learn to cook intuitively, you’ll never cook anything great except cakes.

Ingredients
*whole chicken
*olive oil
*Kosher salt
*freshly cracked pepper
Preparation Instructions
I. Get your oven rocket hot! Do this first. 450°
II. Prepare the bird by rinsing it in cold water and trimming it of any excess fat
III. Thoroughly dry the chicken inside and out with paper towels. Do not underestimate the importance of this step.
IV. Truss the bird. If you don’t know how to do this, then Google it.
V. Sprinkle salt and pepper inside the cavity.
VI. Brush the outside of the bird with olive oil. Don’t neglect the sides and back.
VII. Generously rain down kosher salt all over the bird. (Do not, I repeat, do not now, or ever, use iodized salt.) Don’t neglect the sides and back. Use more than you think might be correct. Chicken is like popcorn, the salt is key. When the chicken is done roasting you still want to see crystals embedded in the golden brown skin.
VIII. Also generously season with freshly cracked black pepper. No, you may not use pre-ground.
IX. Put the chicken in a v-rack in a roasting pan and put it in the oven. Cooking is like religion, you have to believe its happening. Don’t keep opening the door. “If you’re lookin’, you ain’t cookin’.”
X. Now here’s the tricky part. I don’t tell you how long to roast the bird. That’s because I don’t know how big your chicken is. The chicken is done when it is a deep, golden brown AND the leg/thigh joint seems as if it would separate from the body with the gentlest tug. If these two things have not happened, people will not love you as much as they love me. No . . . seriously . . .
XI. Rest the bird under a foil tent for 15 minutes. Do not skip this step.
XII. Enjoy, you’ll never buy those expensive, tasteless boneless skinless chicken breasts ever again.
