When it comes to grilling, so many people are concerned about the proteins they always forget about the sides. This recipe helps round out that great grill flavor with a healthy option even for non-meat-eaters. Simple, elegant, delicious. A split romaine, drizzled, and warmed (and a bit charred) on the grill. Serve whole!

1 head of romaine lettuce
Fresh cracked black pepper
Olive Oil Spray (or regular olive oil if you don't have an atomizer or PAM Olive Oil spray)
Fresh lemon (optional)
Trim the end of the stem of the head of romaine, then slice in half lengthwise. On the cut side, spray (or drizzle) olive oil until nicely coated. Sprinkle kosher salt and grind fresh pepper to taste. Place cut side down on grill over medium or high heat, cover for 2-3 minutes or until the lettuce begins to brown and char. Remove from grill, dress with a squirt of lemon (optional).
Sometimes I dice up some red onions and tomatoes, and serve with caesar salad dressing or blue cheese dressing with fresh high quality blue cheese crumbles & bacon bits.
