Bacon wrapped Beef with cheese and jalapeño
This is a pretty simple and basic and is wide open for interpretation and alterations.

Depends on how much meat you have.
You can make as many or few as you like.
CHUCK – Bacon – cheese – jalapenos
Cut the medallions about 3-4 inches in diameter.
Cut jalapenos lengthwise in quarters.
Place one strip of jalapeño in center of the beef.
Add a chunk of your favorite cheese (Colby or a small pile of shredded.
Roll up the meat and wrap a slice of bacon around it and sprinkle with a lil bbq rub.
Grill at 225-325
Cook till the bacon has that right color and gets crispy.
You can slow cook with smoke.. or hotter till done
